I'm thinking it would be funny and interesting if Eric went on a Blind Date with someone. Maybe on a hellmouth or in California while on business. Perhaps the vampire Queen of Mississippi put him up for it as a laugh and cannot go against her orders.
Anyone offering to go on a date with him? The characters would obviously not know who they were going to get and would turn up to the date not knowing. It would be funny if he went on a date with a slayer.
